Born in the countryside near Rome, Stefano grew up in harmony with its seasons, picking apples, pears, walnuts and blackcurrants when they ripened on their branches and tending to his grandmother’s delicate tomato and herb garden.
Having gained an understanding of the changing seasons and the rotation of the crops, Stefano went on to develop an organically fresh basis for his cooking passion.
At the age of 14, his family migrated to Montreal, Canada in search of a new beginning. However he soon went back to Italy alone in 1978 to attend the Ferrandi Culinary College, where he studied Classical Italian Regional Cuisine and Professional Development for two years.
He later returned to Canada, where he completed his education in 1982 at St-Puis Culinary Institute in Montreal. He gained a diploma in Contemporary Italian and French Professional Cuisine.
His experience in the industry covers 25 years in various places including The Fairmont Southampton in Bermuda; Savoy Hotel & Spa in the Seychelles;InterContinental Citystars Cairo Hotel in Egypt, DoubleTree by Hilton Hotel Jakarta in Indonesia and Karma Samui in Thailand, to name just a few.
Stefano’s exciting and well-travelled career results in him having many stories to tell – stories that he looks forward to sharing with resort guests and the team at Dining on the Rocks.
