This October, celebrate the season with pumpkin food and beverage specials throughout the day at Proof, an American Canteen, as well as a three-course Oktoberfest beer-pairing dinner on Saturday, October 8, 2016 at Four Seasons Resort Scottsdale at Troon North.
“Pumpkin is such a versatile squash, lending itself to both sweet and savoury preparation,” says Executive Sous Chef Joey Cavaretta. “Nothing says fall like a pumpkin spice coffee cake to start the day, or a hearty roasted pumpkin soup on a crisp October evening.”
Proof diners can greet the day with pumpkin spice pancakes with cinnamon whipped cream, cranberry compote and streusel topping, or savour a warm pumpkin spice coffee cake. Lunch and dinner specials include roasted pumpkin maple soup with fried sage, pumpkin seeds and crispy housemade bacon, along with pan-roasted duck breast with roasted pumpkin hash, fried brussels sprouts and spiced persimmon chutney. For dessert, a pumpkin pie sundae with housemade pumpkin ice cream, caramel sauce and cinnamon whipped cream completes the meal.
Complement the selections with a pumpkin latte, Wasatch Pumpkin Seasonal Ale and The Smashed Pumpkin seasonal cocktail, featuring spiced rum, butterscotch liqueur, cream, pumpkin spice and chipotle.
On Saturday, October 8, Proof will feature the specialty pumpkin items in a three-course Oktoberfest dinner menu, featuring local beer pairings by Four Peaks Brewing Company. Additional featured choices include jumbo prawn corn dogs with housemade beer mustard, and smoked pork cushion with kettle beans, corn and scallion crepes and tangerine brussels sprouts. Grilled pumpkin pound cake with vanilla bean ice cream and maple roasted pecans rounds out the dinner. The cost for the three-course dinner is USD 54 per person, with beer pairings available for an additional USD 15.
