Chef’s Table Reinvented at Four Seasons Resort Rancho Encantado Santa Fe

Ask for the newly renovated Chef’s Table in Terra at Four Seasons Resort Rancho Encantado Santa Fe to embark on an interactive epicurean journey with Executive Chef Andrew Cooper and savour a multi-course tasting menu – all experienced right inside the kitchen.

 

“Most chef’s tables don’t give diners a true hands-on experience and then allow them to enjoy their meal in the kitchen,” says Chef Cooper. “Our guests receive a one-on-one cooking lesson and true sense of what it’s like working in a resort kitchen alongside our talented team plus dine at our new table to continue the culinary experience throughout the evening.”
 

After undergoing a USD 50,000 renovation, the new Chef’s Table offers a stylish and exclusive dining area with seating for up to 10 aspiring chefs in the centre of the newly tiled kitchen. The table was custom built with a hand-selected granite slab, stainless steel and wood plank frame, and striking pendant lighting. A new LCD monitor tells the story of Terra restaurant showcasing pictures of the cuisine, Chef working with local growers and farmers, and culinary trends.
 

To begin the culinary journey, each guest is paired with a chef to prepare one course of their dinner. The adventurous diners don an apron to dice, slice, sauté, call out orders and even help to expedite tickets. Chef Cooper offers tips and tricks on creating Terra’s inventive interpretation of contemporary American dishes with seasonal and local influences, and everyone has a chance to take part in the meal’s preparation.

 
A night at the Chef’s Table features an eight to twelve course tasting menu – based on Chef’s whim and the group’s appetite – and is offered for USD 150.00 per person, with wine pairings available at an additional cost. The four-hour session is available for two to 10 guests and must be booked at least 24 hours in advance.
 

Chef Cooper started the interactive Chef’s Table in December 2012 with a temporary table he set up after receiving requests from diners to come back to the kitchen to see how a certain dish was made or who were curious about a specific ingredient or technique he used. The program proved so popular that a permanent table was built to accommodate so many eager cooks in the kitchen.

 

 

Even the Resort’s youngest aspiring chefs can learn from Chef Cooper as he now offers a cooking program with recipes designed for children ages 5 and older. Devoted to local producers, Chef Cooper also conducts culinary adventure tours at local farms and even takes guests shopping at the Santa Fe Farmers’ Market to select fresh ingredients used in dishes they cook themselves in the kitchen at Terra that evening.
