Learn from the Masters This November at Four Seasons Hotel Hong Kong

cq5dam.web_.press_.400.keepaspectratio-11-300x169Fall has come to Hong Kong and so too the arrival of festive season. Blue Bar and Italian Executive Chef Andrea Accordi are cooking up something special for Four Seasons Hotel Hong Kong guests to get in the celebratory spirit.


Italian Entertaining Masterclass

An Italian through and through, Chef Accordi is keen to share with Hong Kong his personal tips and recipes for a proper Italian Christmas feast. For home cooks looking for an indulgent alternative to turkey, Chef Accordi’s abbacchio alla Romana, a milk-fed lamb stew found on many Italian tables during the holiday season, is sure to delight. On Saturday, November 19, 2016, Chef Andrea will host a demonstration class for up to 20 guests where he will reveal the secret for how to cook succulent, fall-off-the-bone lamb along with traditional Italian side dishes. Afterward, an exclusive four-course meal with wine pairing will be served in the kitchen, chef’s table style. The menu includes: vitello tonnato – poached veal tenderloin with dry capers, celery and tuna anchovy sauce; homemade gnocchi with porcini mushrooms, parmigiano and Alba white truffle; abbacchio – roasted baby lamb with artichokes, olives, purple mashed potatoes; and lemonade ice cream.


Class participants will receive a small gift, recipe booklet and champagne reception. Class size is limited to 20 guests. Guests are asked to wear close-toed shoes for the kitchen demo and casual chic attire for lunch. Cost is HKD 1,588 per person. All prices are subject to 10 percent service charge.


Expert Jamon and Dom Pérignon

Jamon Iberico is one of Spain’s most famous delicacies as well as its most revered cured meat. Only the most experienced carvers have the expertise to bring out the diversity of flavour and texture in the different parts of the ham leg through their skilled slicing. From November 27 to 30, 2016, Four Seasons welcomes El Cortadores, a Spanish master carver, to showcase his finesse in hand slicing wafer thin ham that melts in the mouth.

El Cortadores will be at Blue Bar from 12:00 noon to 2:30 pm and 5:30 to 11:00 pm each day of the promotion, demonstrating his deft carving techniques and sharing with guests his tips on jamon appreciation. A small taste of jamon will be given complimentary with every drink order. Guests looking for a full experience of Jamón Ibérico Blázquez Bellota Admiration are welcome to order 50 gram or 100 gram portions, HKD 210 and HKD 380 respectively.

For those who love cured ham of the Italian variety and bubbles of the vintage French, through December 30, 2016 Blue Bar invites guests to enjoy a complimentary taste of Langhirano Parma ham and Matera pickles with each order of Dom Pérignon Champagne 2006. Dom Pérignon will be offered at special price of HKD 318 per glass or HKD 1,900 per bottle.
