One&Only Palmilla celebrates its 10th anniversary with “Agua by Larbi” gastronomic delight

oneonly-palmilla-mexico-300x3002014 marks the 10th Anniversary of the opening of One&Only Palmilla in Los Cabos, Mexico. As part of the celebration, the resort is re-launching its beloved Agua restaurant as “Agua by Larbi” in recognition of Chef LarbiDahrouch. Chef Dahrouch is an integral part of the resort and has worked there since it opened in 2004. Agua has long been a favorite of guests at Palmilla for its lively atmosphere and nightly rotation of live entertainment; its stunning view of the Sea of Cortez and the lights of San Jose del Cabo; and its fusion of Mexican, Mediterranean and Indian cuisine.

Larbi’s Table
“Larbi’s Table” is now available in the restaurant’s gardens, with Chef Dahrouch’s menus incorporating fresh seafood and produce from local purveyors. The circular tasting table is available for 10-12 guests and has a family-style lazy Susan, enhancing the communal experience. Guests can choose from two different tasting menus: assorted chilled seafood,featuring ceviche, octopus salad, and oysters, or “surf and turf,” featuring New York strip steak and shrimp or lobster. Side dishes of Imperial Osetra Caviar are also available.

Raw Bar
With Agua’s new Raw Bar, guests can sit at highboy tables overlooking the sea for an afternoon
snack or hors d’oeuvres. The menu offers a variety of seafood including ceviche, sashimi and carpaccios – all caught fresh that day.

Other dining options at Palmilla:
Market – Executive Chef Sebastien Agnes hand selects the area’s freshest regional seafood from local fisherman and produce from a nearby organic farm.
Pelican Beach Grille – Located on one of the only swimmable beaches in the area, Pelican Beach Grille is convenient for eating lunch without leaving the beach.
La Fonda – Each Tuesday night, Palmilla creates a pop-up Mexican-style restaurant in the courtyard below the chapel. Guests eat al fresco under string lights and the glow of the chapel, surrounded by colorful glass hurricanes with flickering candles.
Breeze – On the terrace of the resort’s original infinity-edge pool is Breeze, a casual taqueria that offers a light Jean-Georges created menu with everything from quesadillas to ceviches to a variety of fresh fish and scallops.
Suviche – The restaurant and lounge offers a blend of fresh sushi and Mexican ceviches, incorporating both local and Asian flavors. Sushi is prepared by a traditional Japanese chef hand selected in Tokyo by Jean-Georges.
Private Dining – There are several private dining options at Palmilla, including the Moroccan Table (a Moroccan-style wooden structure in a secluded cove with lanterns and service from Agua), the Cove (a table set up in another cove, surrounded by candles), and the Pelican Beach Cabanas (the four cabanas can all be rented out for private dinners for up to six people). Along with the privacy of these dinners, guests can hand-pick the menu. Guests can also arrange for dinners or private tequila tastings in the resort’s Herb Garden.
