To the South of Thailand With Love From Peru at Four Seasons Resort koh samui

southWith Peruvian cuisine currently taking the world by storm, CoCoRum Restaurant & Bar at Four Seasons Resort Koh Samui welcomes one of its rising stars, Arturo Melendez, to showcase his skills and passion for culinary adventures from Wednesday, August 17 to Sunday, August 28, 2016.

 

Having voyaged far across the Pacific, all the way from Peru, to be beside the Gulf of Thailand, Arturo’s creations perfectly complement CoCoRum Restaurant & Bar’s Latin ambience and inspirations. Signature dishes he promises to prepare feature prime local and imported seafood, served raw and cooked, in the likes of tuna tiradito, beetroot causa, scallop hot ceviche, pork chicharron, arroz con mariscos and lomo saltado.

 

Moreover, the short residency will feature an exclusive 7-course Signature Tasting Menu only available on Friday and Saturday August 19 and 20. Priced at THB 5,800, which includes pre-dinner drinks, and wine and cocktail pairings, with the latter specially created for the occasion by another hot property in the food and beverage spheres, David Cordoba. Better known as Mr. Daiquiri, one of the leading bartenders to emerge from Latin America, he fortuitously also happens to be on the island at the same time.
 
As for the great Arturo, originally from Trujillo on Peru’s north coast, he grew up in a town in love with the beach and abundant seafood. He started cooking at age 18, attending the prestigious D’Gallia Institute, where his accolades included best dish awards in eight categories.

 

His first cooking appointment was to an Italian trattoria, Italian food being one of several outstanding influences on Peruvian cuisine, with others including Chinese and Japanese. Within a short time, he became an important instructor at the highly successful Blue Ribbon International in the Peruvian capital, Lima, going on to open two more branches and mentoring more than 400 newly-minted professional chefs. In late 2015, his talents graced the grand openings of ERU, the Peruvian restaurant at The Patina, Capital Singapore.

 

Situated on the Resort’s private beach, with mesmerising views of the ocean, CoCoRum Restaurant & Bar is not only fabled for its big-hearted menu of the only authentic Latin American food on the island but is home to the finest and most comprehensive collection of rums in Thailand.
