White Truffles, the Diamonds of the Culinary World, Are Back at Bella at Four Seasons

With this ingredient that is highly appreciated by the finest palates, Bella restaurant at Four Seasons Hotel Cairo at Nile Plaza has tailored an exceptional menu that accentuates the white truffle, and brings out the colour and flavour of the entire recipe’s complementing ingredients.

For appetizers, a duet of beef performs a dance on the taste buds, where the beef carpaccio, beef tartar, parmesan cheese and white truffle orchestrate a symphony, just as the matching wine from Bella’s Wine Cellar’s menu makes its appearance.

The Wine Cellar includes a variety of 1,500 imported and local wines, bound to create a new benchmark in wine preferences: the intense Colle Del Re Albana Di Romagna, the authentic Brunello red wine, the white Vermentino Toscana, the San Jacopo Chianti Classico and Amarone have all been chosen by expert palates to compliment the white truffle.

More succulent appetiser options include the delicious burrata cheese with a side of smoked salmon and drizzled in truffle oil; the asparagus gratin with Italy’s favourite and most authentic parmigiana with a hint of truffle; and tuna tartar with fresh capers and a zesty citrus dressing.

As for the all-time-favourite Le Paste, the genius chefs at Bella have concocted the perfect assortment of risotto, pecorino and divine lobster ravioli, stuffed with olives, zucchini and garnished with the full-flavoured white truffle oil.

And for Secondi Piatti, the Italian for main course, a palatable sea bass fillet, a savoury Australian veal fillet and a pan-seared-to-perfection salmon fillet makes picking just one dish an impossible feat.

After a feast from an Italian haven, leaving without closure would be a mistake. The decadent hazelnut ice cream with truffle chocolate sauce paired with the right dessert wine brings out all the flavours; the perfect harmony between sweet and bitter makes for the perfect finale.
